I know many single people have the opposite complaint: that it’s expensive/boring/uninspiring to cook for one. But then maybe they’re just lonely. Whomp whomp. But I love cooking for one, for several reasons.
1. I don’t have to concern myself with another person’s wants, needs, preferences, allergies, hankerings, etc.
2. A smoothie becomes a totally acceptable dinner. And lunch. And obviously breakfast.
3. I can make my dinner as simple or complicated as I want. And if I want to stop half-way to paint my nails, I can friggin do that!
There are probably more reasons, but they’re probably not that great.
You know what is great though? This goddamn delicious salad.
Arugula Asiago Salad (for one)
For the dressing
Juice of one lemon
2 Tbsp extra-virgin olive oil
1 tsp each Dijon mustard and honey
Salt and pepper to taste
For the salad
Handful of arugula
Thinly sliced red onion
Freshly grated asiago cheese
Handful toasted hazelnuts
Whisk together dressing ingredients and set aside.
Combine the rest of the ingredients and top with about half the dressing.
Serves, yup, 1.
